I was talking on fb with one of my cousins about Bread making. She is a granola much more than I am so I feel funny sharing my knowledge of bread with her. BUT she has my old friend Mr. Hobart in her home and so bread making has been taken to an all new level with her and I! Long long ago when I was young and energetic I tried my hand at a little bakery business. It was a nice little successful business. But I got tired of being tied down and I wanted to do other things with my life. So my dear pa-pa sold all the equipment off to relatives and I don't know who all. My Aunt and Uncle got the Hobart. I've always been glad they wanted it. It was such a good friend. I love kitchen stuff and especially commercial pieces. Baking is a therapy for me. So anyhow, my dear cousin Heather (whom I have actually not even spent much real life time with and would have to say I don't really "know" her except blood is thick so I "know" her) now has that mixer. Heather and her siblings lost both of their parents too early. Much too early. Heather has beautiful memories of baking with her mom. And now I'm happy to find out she's enjoying this mixer with her kids. So today we were talking recipes. Here's the latest and greatest that has worked for me.
Amy's 20 quart Basic Bread Recipe
Makes about 17 loaves
4 Cups oil
4 Cups sugar or less
8 TBSP Salt
1 Cup Yeast
16 -18 C warm water
Flour and I've never measured....I go by feel. It should feel not too sticky and a little rubbery and stretchy.
Knead at least 10 minutes or longer.
I let it raise on an oiled counter top and then shape into pans. This mornings batch turned out perfect for texture. From start to finish it took 2 1/2 hours.

| I poked holes in it with a fork today because it was so airy and I thought maybe I could avoid bubbles. It turned out fine and probably would have been fine with out the fork marks. It's texture and taste made up for the ugly. So then after the bread making and the school work getting done for the day, I took my eldest up to the chiropractor because he did something to his neck and couldn't move it. When we got to the chiropractic office we checked in and my baby girl promptly got sick in the waiting room. I was deeply sorry. For them there and for her. She's been fine now since we got home and all seems fine! Weird. But the biggest thing? It was all women in the office and everyone of them flocked in and thought only of Jeanie and my needs. They were right there helping clean up and offering toys for Jeanie and total support. They were true example of Servant hood. The amazing support women can give each other when we rally for each other is so good. God has been teaching me that in so many ways all summer long and I hope I'm learning about it! Where ever you are. Take care of the mom/ sister/ girl friend close to you. We need each other and the encouragement is HUGE! Thanking God for the women encouragers in my world! |
